There are so many great Spanish chicken recipes. I don't know what it is, but the chicken in Spain seems to have much more flavor than what I am used to. They put this to great affect a create lots of great dishes featuring their pollo.
This ingredient shows up everywhere, and they make sure they don't waste any part of the bird. If they grill a breast one day, they might put the leftover parts in a stew or paella the next day. You certainly see the breast pieces used less than we see in the US or UK.
