Pollo con Salsa de Tomate "Chicken with a Tomato and Red Pepper Sauce"
I made Pollo con Salsa de Tomate last weekend in an effort to get rid of a few leftovers in the refrigerator. I will admit this is not strictly a "traditional" Spanish dish, but the result was so nice, I thought I would share it here. While it may not be a common dish in Spain, I really think it is in the spirit of good homemade Spanish food. The peppers, tomatoes, beer and paprika combine to create a really nice sauce. This is easy to make and a nice dish for Sunday lunch. Serve it with some
patatas a lo pobre
and some crusty bread and enjoy!
Serves: 2-3 Preparation time: about 45 minutes to 1 hour
INGREDIENTS
2-3 fresh thighs and drumsticks 2 tomatoes finely chopped about 12 cherry tomatoes 1 red pepper 3 TB ketchup 1 33cl bottle or can of beer 1 onion finely chopped 3 garlic cloves finely chopped 1 ts sweet paprika 1 ts spicy paprika 3 TB olive oil salt and pepper to taste
DIRECTIONS
Start by heating the oil over medium-high heat. Add the onions and garlic and cook for about 3-4 minutes. Cut the red pepper into thin strips and add to the skillet. Cook over medium heat until the vegetables begin to soften. Add the chopped tomatoes. Make a slight "x" shaped cut in the bottom of each cherry tomato and add to the skillet. Cook over medium heat for about 5 minutes. Increase the heat and add the beer. Briefly bring to a boil and then reduce the heat to low and start to simmer. Add the paprikas, ketchup and some salt and pepper to your taste. Clean the chicken and lightly season with salt. Add to the sauce and cover the skillet and slowly simmer for 30-40 minutes or until the chicken is done. Turn the chicken a few times during this time to cook both sides. When done, the sauce should have reduced down to a nice semi-thick tasty sauce. Serve with some crusty bread and enjoy!
