Pimientos Rellenos con Queso "Roasted Red Peppers Stuffed with Cheese"
No tapas bar would be complete without pimientos rellenos con queso. There are a few variations of these stuffed peppers, but this recipe is especially easy to make!
The Spaniards use a special type of peppers called pimientos del piquillo. Unless you have a special Spanish specialty store, you probably won't be able to find these. They are smaller than typical red peppers and have a little nicer flavor.
If you can't find these, don't worry, you can use roasted red peppers. You can often find these already prepared in the canned vegetable section of your supermarket. If not, take your red pepper and blacken it over the grill or hot skillet. Don't be afraid to really char it. Put it in a freezer bag and put in the refrigerator to cool. Once cool, simply peel off the skin and you are ready to go.
You can use almost any soft cheese. The Spanish often use Philadelphia brand. We use a French brand that has garlic already mixed in. I strongly suggest mixing in some fresh herbs and garlic to add to the flavor. Experiment, you cannot do it wrong!

INGREDIENTS
3-4 piquillo peppers (peeled roasted red peppers work fine) 1/2 cup soft fresh cheese (for example, Philadelphia) assorted fresh and dry herbs, garlic, etc.
DIRECTIONS
In a small bowl, combine the cheese with your herbs, garlic and other selected flavorings. Mix well and then spoon into the peppers. Serve and enjoy!
