Patatas Bravas "Crispy Potatoes with a Spicy Sauce"
Patatas Bravas are one of the most common tapa dishes! You find these great little crispy potatoes offered in just about every tapas bar.
This dish is also a little break from the norm in Spain. Normally, cooking in Spain is very mild with only a small handful of dishes having a spicy taste. This dish is one of those spicy exceptions! Granted, what a Spaniard finds spicy might be different from you!
The sauce can be made a million ways. The most common and easiest is perhaps simply mixing some mayonnaise, ketchup and spicy paprika. I have offered my own version of the Brava sauce below.
This dish is so easy, so there is no excuse not to include it in your next tapas meal! Enjoy!
Serves: about 4 tapas portions Preparation time: about 20 minutes
INGREDIENTS
for the potatoes: 2 lbs potatoes olive oil for frying salt optional: paprika (spicy or sweet)
for the Brava sauce: 1 cup tomato sauce 1 TB red wine vinegar 1 clove garlic finely chopped 1/2 ts sweet Spanish paprika 1/2 ts spicy Spanish paprika (add this to your taste) salt to taste 2 TB olive oil
DIRECTIONS
While heating the oil (about 1 inch in the pan), peel and cut the potatoes into about 1" cubes. Add the potatoes to the oil and cook until golden (about 12-15 minutes). Remove from the oil and place on a paper towel lined tray. Sprinkle with a little salt and a dash of paprika if desired.
To make the sauce, heat the oil and add the garlic. Cook for one minute and then add the tomato sauce. Add the vinegar and paprikas. Slowly simmer for about 5 minutes. Add salt to your taste and check for spiciness.
Pour some sauce over the hot potatoes and serve. Enjoy!
