Patatas a lo Pobre "Potatoes with Onion and Parsley"

Patatas a lo pobre is a classic and very common Spanish potato recipe. Roughly translated, this means "poor man's potatoes." This dish is commonly served as a tapa or as a side dish with many meat and fish meals.

I like to make this as an accompaniment to many of the Chicken recipes I have on this site. The potatoes are cooked with garlic and onion and sprinkled with fresh parsley. I suggest using good quality fresh potatoes as the flavor of the potatoes really comes through beautifully in this recipe.

As you can imagine, patatas a lo pobre is incredibly easy to make. The trick is cooking the potatoes so they do not become brown and crispy nor soft and mushy. Cooking over medium heat and frequently checking the potatoes will ensure great results. Give this one a try the next time you need a quick, easy and tasty potato dish! Enjoy!




Serves: about 4
Preparation time: about 25 minutes


INGREDIENTS

2 lbs. potatoes peeled
3 cloves garlic finely chopped
1 onion finely chopped
1-1/2 TB fresh parsley finely chopped
3 TB olive oil
salt and pepper to taste


DIRECTIONS

Cut the potatoes into rough slices about 1/8 to 1/4" in width. Heat the oil over medium-high heat and add the onions and garlic and cook for about 5 minutes over medium heat. Now add the potatoes and cook over medium heat for about 20 minutes stirring occasionally until the potatoes are done. Be careful not to cook on very high heat as this will brown the potatoes. It is also important to not overcook the potatoes as they will be soft and mushy.

When done, remove from the heat and strain off the extra oil. Put into a bowl and toss with the parsley. Add salt and pepper to your taste and serve and enjoy!
