Gazpacho de Melon is a fresh Spanish dessert recipe based on an original classic! This healthy recipe is just perfect for a hot day! What's more, the recipe is a cinch to make!
This recipe uses Spanish melons and they have a green skin with a white to light yellow flesh. They are similar to Crenshaw melons. If you can't find these, honeydew melon might work well.
I also mix a little mint into this recipe to really bring out the freshness. This is one of my favorites, I suggest it for your next summer dinner party! Enjoy!
Serves: 4-6 Preparation time: 15 minutes
INGEDIENTS
1/2 Spanish white melon (or honey dew) 1/2 cantaloupe 1 peach 1 tomato peeled 2 TB chopped mint 2 TB extra virgin olive oil
DIRECTIONS
Peel the melons and discard the seeds. Chop the flesh into about 2 inch pieces and put in a large bowl or your food processor. Peel the peach and discard the pit. Add the chopped peach to the bowl. Roughly chop the peeled tomato and add to the bowl. Add the oil and mint and use your hand blender or food processor to blend the ingredients to smooth soup.
Give the gazpacho a taste, you might add some sugar if you desire more sweetness. Chill in the refrigerator for a couple hours.
You can also add more mint, finely chopped peach, melon or strawberry as a garnish. Enjoy!
