This gambas al ajillo recipe is about as easy as it gets. It is a classic Spanish shrimp recipe that is a common tapa.
There is no rocket science involved in this one. In order to get a little more garlic flavor into the shrimp, I marinate the shrimp in a little garlic and olive oil prior to cooking. Sometimes you will see a dried chili pepper in there. This is unusual for Spanish food as nothing is ever really spicy. I made the mistake of eating the chili once, ouch!

15-20 small to medium size uncooked peeled shrimp (fresh is always best, but I often used use uncooked frozen shrimp) 6-7 cloves of garlic roughly chopped 1/2 TS salt 1/4 TS fresh ground pepper 1 small dried chili pepper 1/2 - 1 cup olive oil
DIRECTIONS
In a small covered container, shake some of the chopped garlic with 3-4 TB of olive oil. Cover the peeled shrimp in small bowl with the garlic oil and let marinade for 15-20 minutes.
In a small skillet, heat enough olive oil to just cover all of the shrimp. Once the oil is very hot, add the garlic, salt and pepper. Cook for 30 - 60 seconds. Now add the shrimp and chili pepper. Cook 3-4 minutes until the shrimp are done.
Serve the shrimp in the hot sizzling oil with some bread for dipping the oil. ĦQue rico!
