Ensalada Murciana "Salad of Tomatoes, Tuna, and Egg"
Ensalada Murciana is one of my wife's favorite Spanish salads! I don't care for it myself, but I make it for her! This salad hails from the region of Murcia where we lived for 3 years.
This healthy recipe takes advantage of that region's fresh produce and it is INCREDIBLY easy to make!
This can be served as a salad or as a tapa. My wife always had a small portion of this salad every time we went for tapas. I hope you enjoy it as much as she does!
Serves: 3-4 Preparation time: 10-15 minutes
INGREDIENTS
1 16 oz. can of whole peeled tomatoes in tomato sauce 1/2 onion sliced 1 can of tuna packed in olive oil 2 hard-boiled eggs 1/2 cup black olives (can also use green olives) salt to taste
DIRECTIONS
While you are boiling the eggs, combine the onion, tuna and olives in a bowl. Crush the tomatoes in your hands and put the tomatoes and and juice into the bowl.
Once the eggs are done, peel them and chop them up. Add to the bowl and mix well. Season with salt to your taste if you want.
