Ensalada Mixta "Mixed Salad"

Go to just about any Spanish restaurant, and chances are, you will be served an Ensalada Mixta. This is just a mixed salad, but there is something about the way the Spaniards use their fresh produce and present the salad that makes it special.

Like most salads in Spain, this salad is simply dressed with salt, olive oil and vinegar. All of these flavors combine to create a nice fresh taste.

Serves: 4-6
Preparation time: about 15 minutes


INGREDIENTS


1 head iceberg lettuce
3 carrots grated
2-3 tomatoes cut into eighths
1/2 onion cut into slices
8-10 white asparagus
handful of Spanish green olives
1 can tuna packed in olive oil (or fresh tuna fillet)
extra virgin olive oil
balsamic vinegar (or Vinegar de Jerez)
Salt


DIRECTIONS

Wash the lettuce and chop. Place the lettuce in the center of a large plate. Now ring the outside edge of the plate with the sliced tomatoes. Add the onion in the center. Add the asparagus diagonally across from the center. Add the grated carrot and tuna to the center. Sprinkle the olives around the edge of the plate.

Add salt to taste, a little vinegar and a good drizzle of olive oil just prior to serving. Enjoy!
