Ensalada de Arroz is a great salad that is so easy to make! You often see this cool salad during the hot summer months for lunch.
My wife and I have this from time to time, and I thought I would share it with you here! You can mix-and-match the vegetables as you wish to change up the salad or just get rid of leftover vegetables in the refrigerator and freezer!
Try this nice salad on that next hot day. It is a great refreshing lunch!
Serves: 4 Preparation time: 20 minutes
INGREDIENTS
1 1/2 cups of rice 1 red pepper chopped into small pieces 2 tomatoes finely chopped 1 can artichokes chopped 3 carrots grated 1/2 cup fresh or frozen peas 1/2 cup green olives chopped 1/2 onion 2 TB fresh cilantro or flat-leaf parsley finely chopped
(you could also use, black olives, asparagus, radishes, cucumber, etc.)
for the dressing: 1/2 lemon juiced 1/4 cup extra virgin olive oil pinch of salt black pepper 1 TS of honey
DIRECTIONS
Make the rice, making sure it is not too sticky. Put in the refrigerator to cool for a couple hours.
Once the rice is cool, add the vegetables and herbs and mix together.
To make the dressing, combine the ingredients in a small container that can be sealed. Shake for 30 seconds. Add the dressing to the salad and mix well. Enjoy!
