Ensalada de Ahumados "Salad of Smoked Fish, Tomato, and Asparagus"
I recently discovered Ensalada de Ahumados. This is a terrific summer salad. The flavors of the smoked fish combine perfectly with the tomatoes and asparagus. This is just a great light summer meal.
You can also add a little melon on the side of this dish as the sweetness of the fruit goes well with the salty smoked fish. I make mine with smoked salmon and smoked halibut or cod. Whatever your choice, I am sure you will enjoy this nice salad!
Serves: 4 Preparation time: about 15 minutes
INGREDIENTS
about 8 slices of smoked salmon about 8 slices of smoked halibut or cod 4 tomatoes 12 green asparagus 1/2 onion very finely chopped about 1 TB of balsamic vinegar 2 TB extra virgin olive oil salt and pepper to taste
Optional: cantaloupe or white melon cubes
DIRECTIONS
Heat a little oil in a skillet and quickly saute the asparagus (about 8 minutes). Remove the seeds from the tomatoes and cut them into thin slices. Arrange the tomatoes on a plate and sprinkle with the onion. The fish makes this dish already a little salty, but if you desire more salt, this is where you would add it.
Arrange a layer of the smoked halibut or cod over the tomatoes. Now add a layer of the smoked salmon. Add the asparagus on top and drizzle a little vinegar over the salad. Add a generous splash of the olive oil. Add some melon on the side if you desire. Serve and enjoy!
