Sopa Fria de Pepino y Sandia "Cold Cucumber Soup with Watermelon"
Sopa Fria de Pepino y Sandia, or cold cucumber soup with watermelon, is a wonderful refreshing alternative to gazpacho. This cold soup really takes a punch out of those hot summer days!
By itself, the cucumber does not have much taste in this soup. But add the watermelon, and you have something special. This is very different and is a fun and very easy starter for your next summer dinner party. Let me know how it goes!
Serves: 4 Preparation time: about 10 minutes
INGREDIENTS
2 cucumbers about 4-5 cups of watermelon chunks (without seeds) 2 pieces of day-old bread 1 cup vegetable stock 2 TB flat-leaf parsley finely chopped 1 TB lemon juice 2 TB olive oil 8 black olive finely chopped salt to taste
DIRECTIONS
Put the seedless watermelon chunks in a bowl or food processor and process down to a liquid. Put in refrigerator to cool.
Soak the bread in some water. Cut the cucumber into chunks (leaving the on the peal) and put in a large bowl or food processor. Add the bread, stock, lemon juice, parsley, oil and salt. Process into a soup consistency and check taste for enough salt. Put in refrigerator to cool.
When ready to serve, pour the cucumber soup into a bowl or large glass. Add a nice pour of the melon liquid in the middle to create a red center in the soup. Garnish the watermelon with a pinch of the black olive. Enjoy!
