You will find Calamares a la Romana on the tapas menu of just about every tapas bar. Everyone has probably tried these battered fried squid rings as some point, and the Spanish like to do them in their own simple way.
Really, this fish recipe could not be any easier. Of course, there are many variations on the batter ingredients, but I have just kept this recipe simple. Be sure to take the time to marinate the squid in some lemon juice prior to cooking as this tenderizes them.
Obviously, fresh squid is preferred for this recipe, but you can try this with some quality frozen squid. Give calamares a la romana a try for your next tapas meal, they are a breeze to make and everybody loves them!
Serves: 4 Preparation time: about 15 minutes active time, about 30 minutes in-active time
INGREDIENTS
3-4 medium fresh squid, cleaned with their bodies cut into rings 2 lemons 1 cup flour 1 clove garlic finely chopped salt to taste 2 eggs beaten about 1 cup olive oil for frying
DIRECTIONS
After cutting the cleaned squid into rings, place it in a bowl with the juice of one lemon, and the garlic. Let marinade for 30 minutes. This gives nice flavor and helps to tenderize the squid.
Heat the oil in large pan. You need enough to slightly cover the squid during frying.
Next put the eggs in one dish and the flour in another. Dip the squid in the beaten egg and then into the flour. Place in the hot oil to fry until golden brown (about 3-4 minutes on each side).
Remove the cooked squid to a paper towel to absorb the extra oil. Lightly salt to your taste and serve with fresh lemon wedges. Enjoy!
