Atun a la Plancha "Seared Tuna with Vegetables"
Atun a la Plancha is a classic Spanish tuna recipe. In fact, this is one of the simplest and most common ways of preparing most of the firmer fleshed fish in Spain. Literally translated, "a la plancha" means "to the iron." The fish in these dishes is simply and quickly seared on a hot metal plate or heavy pan. This simplistic way of cooking the fish lets the quality of the fish speak for itself. Just simply rub the fish with a little olive oil, salt and pepper and then a squeeze of lemon juice after it is cooked. Simple, yet so delicious (if the fish is good :) ) I have taken this simple seared tuna and put it on a bed of vegetables, almost a chunky Spanish pisto. The flavors combine beautifully to create this tasty and very healthy dish. You can also make a similar dish with swordfish or monkfish. Serves: 4 Preparation time: about 30 minutes
INGREDIENTS
For the fish: 4 fresh tuna steaks about 1/3 lb. each 1 TB olive oil salt and pepper lemon juice
For the vegetables: 1 onion finely chopped 2 cloves garlic finely minced 2 medium red peppers diced 1 medium zucchini diced or cut into strips 4 tomatoes peeled and roughly chopped 2 TB fresh flat-leaf parsley finely chopped 1/4 cup dry white wine 3 TB olive oil salt and pepper to taste
DIRECTIONS
Begin with the vegetables by heating the oil in a large skillet. Add the onions, peppers and garlic and cook over medium heat for about 10 minutes. Now add the tomatoes and cook everything for about 5 minutes. Finally, add the zucchini, parsley and white wine. Cook over high heat briefly to burn off the alcohol then reduce to low heat and simmer for about 10 minutes. Season to your taste with salt and pepper.While the vegetables are finishing, rub each tuna steak lightly with olive oil and season with salt and pepper (I like lots of pepper). Heat enough olive oil just cover the bottom of a large heavy skillet or flat cooking plate. Don't add too much oil, just enough to lightly coat the pan. Heat over high heat and add the tuna. Cook on each side for about 4-5 minutes (less if you like it rare). Once the fish reaches your desired interior color, remove and place the fish on top of a nice pile of the vegetables. Squeeze some fresh lemon over the fish and enjoy!
