Arroz con leche is one of the absolute classic Spanish dessert recipes! Whether served warm or cold, it is always a treat.
This is a rice pudding and can be thin in consistency or almost completely firm depending on your tastes. Eat it after it comes off the stove for a nice creamy sweet treat. Chill it and enjoy a delightful pudding!
What's more, this dish is easy to make! My version is a little different as I add some lemon and orange to give it a little zing! Lots of recipes cook the rice separately in water, but I like to just cook it with the milk as it seems to infuse more flavor in the rice. Give it a try and tell me what you think!
Serves: 4 Preparation time: 30-45 minutes
INGREDIENTS
4 cups of milk 1/2 cup of medium grain round rice 1/2 cup of sugar 1 TS of orange zest 1 TS of lemon zest 1 TS orange juice 1 TS lemon juice 1 1/2 TB rum 1 TS of ground cinnamon or 1 cinnamon stick 1/2 TS of ground nutmeg 1 TS vanilla 1 TB buter 1/2 TS of salt
DIRECTIONS
Add milk, rice, lemon and orange zest and juice, rum, cinnamon, nutmeg, and salt to a medium pot and slowly bring to a boil. Stir constantly to avoid the rice sticking to the bottom of the pan. After bringing to a slow boil, reduce to low-medium heat and slowly simmer while stirring occasionally until the rice is nearly cooked (about 20 minutes). Now add the sugar, vanilla and butter and simmer another 5-10 minutes while stirring occasionally.
Let the arroz con leche cool slightly and serve in small dishes (this dessert is very rich) or chill in the refrigerator for a couple hours for a dish that is more like a firm pudding. Enjoy!
