Almejas Vino Blanco "Clams in a White Wine Sauce"

Almejas Vino Blanco is a small clam dish I came up with one day when trying to get rid of a few extra fresh clams! This recipe is so easy and a great little clam tapas dish!

The sauce is very light, so the nice fresh taste of the sea shines through on the fresh clams. Give this a try the next time you feel like some nice fresh clams!

Serves: 4 tapas portions
Preparation time: about 15 minutes

INGREDIENTS

about 1 lb fresh clams (removing any that a open or cracked)
about 1/2 cup dry white wine
1 TB lemon juice
2 TB olive
1 clove garlic finely chopped
salt and pepper to taste

DIRECTIONS

Heat the oil over medium heat in a small sauce pan. Add the garlic and cook for a couple minutes. Now add the wine, lemon juice, salt and pepper and simmer for about 3-4 minutes. Now add the fresh clams and cook (covered) for about 5 minutes until the clams open.

Serve in a dish with lemon wedge garnish and enjoy!
