I had this alcachofas con habas dish at a restaurant in Southern Spain and it was amazing! So, of course, I had to come home and try and recreate it!
This is not a very common dish, but the use of artichokes is very common as they are grown in abundance in the south. This was done at a fancier restaurant and it was a bit "chefy." Being the spring, I tried making this at home with fresh fava beans, peas and artichokes. These vegetables are very time-consuming to clean and prepare fresh so I think you could recreate the dish successfully using frozen beans and peas and canned artichokes. If you are up for it, though, fresh is always best!
The bacon added to dish really gives it a nice smokey flavor. Although not very famous, alcachofas con habas is a wonderful dish and worth giving a try! Let me know what you think!
5-6 fresh artichokes (or 1 can of hearts) about 1 1/2 cups of fava beans (broad beans) (could be frozen) about 1 cup of fresh peas (could be frozen) 1/4 lb of thick fatty bacon 1 clove garlic 1/2 ts of dry thyme 5 TB olive oil salt and pepper to taste
DIRECTIONS
Heat the oil over medium-high heat and add the garlic once hot. Cook for 1 minute and then add the bacon. Cook this for 2-3 minutes and then increase the heat to high. Add the artichokes and cook for 4-5 minutes. Now add the beans, peas, thyme, salt and pepper. Cook over high heat until the beans are done (about 3-4 minutes).
